I’ve used the Øyo Namsen set many times when processing fish and its design shows thoughtful care. The filleting knife has a blade length of 150 mm and comes with a separate plastic sheath to protect the edge. The carving/tolle knife has a blade length of 100 mm, enough to make precise cuts through tough flesh. The set also includes kitchen-scissors (for fins, head trimming etc.) and fish bone tweezers for safe bone removal.

Handles are blue two-component plastic with no openings where bacteria can settle; this makes cleaning easier and safer. All tools pack into a blue cordura fold-folder that keeps everything together and safe to transport.
